History

The Chateau de Mercey, built in the 16th Century at the Southern limits of the Côte de Beaune.The vineyard estate extends over 41 hectares principally on land around the Chateau itself.

Bourgogne Hautes-Côtes de Beaune parcels are lyre-shaped. This technique allows the sun to shine within the vine rows and ensures quick ripening and prevents diseases.

Grape variety

100% Chardonnay.

Vinification and maturing

The grapes are hand harvested then pressed in a pneumatic press. The alcoholic fermentation and the maturation are carried out in stainless steel tanks and oak barrels during 14 months (12 months in oak barrels)
The malolactic fermentation is completed at 100%.

Tasting notes

Visual: White gold in colour with silvery grey highlights.

Nose: Subtle yet expressive with aromas of pear and a touch of toast.

Palate: Slightly tangy flavours of white-fleshed fruit. The finish is delectable and pleasing, full of freshness and a slight touch of minerality.

Wine and food pairing

Enjoy ideally with fish or white meats in cream sauce, fine cheeses.

Ageing potential

Already delicious, this wine can age 5 years.

Serving temperature

Serve ideally at a temperature of around 13-14°C (55-57°F.).
