Vinification and maturing
After racking the wine, the fermentation and ageing processes take place partly in oak barrels, parlty in vats. Occasional stirring -the contact with the oak and lees will give the wine its roundness and woody side -The wine is aged 8 months on lees. We use a proportion of about 20% new oak barrels. The remaining is aged in stainless-steel vats, to preserve the freshness of the wine.
Tasting notes
Nose: It is redolent with superb aromas of hedgerow flowers (acacia, may, honeysuckle, and a very delicate elderflower), as well as violet, lemon, white peach or flint.
Palate: This wine is full of fruit, which on the palate is lively and well-rounded, meaty and long. it has both the coolness and the polish of marble.
