Vinification and maturing
Grapes are harvested by hand and totally destemmed to avoid any kind of bitterness or unwanted vegetal aromas. Maceration lasts about 3 weeks in order to get wines with a deep color, complex aromas and as a consequence a good ageing potential. Traditional vinification is carried out in temperature-controlled concrete vats – that will allow us to master the fermentation temperatures thanks to the great inertia of concrete - with daily pumping-over and stirring occasionally. Alternating those two methods is a good way to obtain balanced wines because the tannins are not too much extracted. Then, the wine is aged for 11 months in oak barrels with 30% new oak.
Tasting notes
Nose: aromas of toasted red and black fruits.
Palate: a very delicious and fruity wine, with supple and soft tannins.

Vintage : 2014
After a nice spring, the summer was wet. On the 28th of June, a storm produces hail damages mostly on Côte de Beaune. Burgundy, like other regions, had some areas affected by acid rot. Concerned plots were subject to a rigorous selection, on the vineyard as well as in the winery. The sun came back in September with a North wind which offers ideal conditions for an optimum grapes maturity. Harvest starts on mid-September with a good volume and great quality. 2014 is a wonderful year for white wines with an optimum grapes maturity due to the sun of September. As a result, white wines are well-balanced, with a good cellaring potential. Red wines of 2014 vintage present an intense color, a fruity nose, some concentration on the palate and soft tannins. Very delicate, these wines reveal all the qualities of the greatest Pinot Noir of Burgundy.
